What better meal is there than breakfast? It is the BEST.
I wake up hungry and am always excited to get in the kitchen and prepare something delicious and nutritious to start my day off right.
I usually begin every dish with vegetables and work around whatever I have in the fridge and pantry. This might sound strange, but if I base my dish on greens first thing in the morning, I make better choices throughout the remainder of my day. I am more positive, my eyes shine a bit brighter and I feel good about myself.
Today I began my day by boiling pre-soaked buckwheat in bone broth with broccoli, onion and various random spices (coriander, thyme and basil). Once fluffy, I drizzled with fresh raw olive oil, a squeeze of lemon and a pinch of celtic sea salt. Chewy, bursting with flavor and packed with goodness. Fuel for my body.
This to me is medicine.
